When I First Heard About the Pearl Harbor Bombing

“Please tell me a personal story about World War II.”

Dear Hannah,

As a young couple, my husband and I were driving along in our car with our young daughter. In those days, we didn’t often use car seats or seat belts, so our daughter Anne was standing on the front seat between us. She was playing with the knob on the radio and happened to turn it to a radio broadcast telling all of us that Pearl Harbor had been bombed by the Japanese. They were attacking us in the United States! We couldn’t believe it. My husband, Bob, turned to me and said, “Betsy, we’ve seen our best days.” (Meaning, our happiest days were over and that things were going to be very different and difficult for us from then on.) Soon after that, he enlisted in the Navy to fight in the war.

Ingredients

  • 1 package yellow cake mix
  • 3/4 cup sherry
  • 3/4 cup vegetable oil
  • 4 unbeaten eggs
  • 1 teaspoon nutmeg
  • 1 package vanilla instant pudding

Directions

  1. Preheat oven to 350 degrees F.
  2. Beat together 5 – 10 minutes.
  3. Pour into a greased and floured tube or bundt pan.
  4. Bake 45 minutes. (For layered cake, bake for 25 minutes in a large pan.)
  5. Cool and sift confectioners sugar over cake.
  6. Flavor improves with age – wrap in Saran wrap & heavy foil for two days for best flavor.

Southern Buttermilk Pie

Ingredients

  • 1 cup sugar
  • 2 tablespoons flour
  • 1/2 cup melted butter
  • 3 eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon ground nutmeg
  • 1 cooked pie shell

Directions

  1. Cook pie shell according to directions.
  2. Preheat oven to 350 degrees F
  3. Mix sugar and flour.
  4. Add in eggs, butter, buttermilk, vanilla & nutmeg.
  5. Mix thoroughly.
  6. Pour mixture into cooked pie shell.
  7. Bake at 350 degrees for 45-50 minutes. Top should be lightly browned.
  8. Let cool and enjoy!

Ingredients

  • 5 ears corn grated
  • 2 tablespoons flour
  • 2 eggs slightly beaten
  • 1 cup milk
  • 2 tablespoon melted butter
  • 1 teaspoon salt
  • 1 dash black pepper
  • 1 dash onion powder

Directions

  1. Mix all ingredients together.
  2. Microwave on “8 power” for 9 min then stir.
  3. Then microwave 8 min more then stir.
  4. Let sit in microwave until firm.

Ingredients

  • 2 pounds yellow squash small and tender
  • 1/2 cup chopped onion
  • 15 saltines crushed
  • 2 tablespoons butter
  • 1 1/2 cups grated cheddar cheese
  • 3 eggs
  • 1/2 cup light cream
  • salt & pepper to taste

Directions

  1. Cook squash with onions and drain.
  2. Add butter, crackers, and about a cup of cheese.
  3. Beat milk and eggs together, then add to the squash mixture.
  4. Top with remaining cheese.
  5. Cook at 425 degrees until bubbly about 10 or 15 minutes.

Basic White Sauce

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 dash pepper
  • 1/2 teaspoon salt
  • 1 cup milk

Directions

  1. Melt butter in top of double boiler, then add flour, salt pepper while stirring until blended and smooth. Then add milk slowly, stirring constantly to avoid lumps. Cook until smooth and thickened.
  2. NOTE: Add grated cheese to make cheese sauce!
